Flourless Coconut Peanut Butter Chocolate Chip Cookies
Preheat oven to 350 degrees. In a large mixing bowl combine:
- 1 cup Earth Balance Creamy Coconut Peanut Butter Spread
- 1 large egg
- 1/2 tsp. baking soda
- 1/4 tsp. salt
- 3/4 cup Madhava Coconut Sugar
- 1 cup Chocolove Dark Chocolate Chips
Mix well until fully combined. Spoon 2 rounded teaspoons onto a baking sheet lined with parchment paper (or I LOVE Silpat Cookie Sheet Liners) about 2″ apart. Bake for 10-12 minutes or until fluffy. Prep time: 5 minutes. Cook time: 12 minutes. Yields 14 cookies.
