Turkey Mexi Bowls

The beauty of this simple recipe isn’t about what it has but what it doesn’t have! It is free of preservatives and an unnecessary laundry list of ingredients found in most taco seasonings and tortillas. You will find the taste is far superior to using packaged spice mixes. A perfect way to enjoy a traditional taco flavor in a healthful way! In a large skillet, brown 2 lbs. Natural Lean Ground Turkey  If using 93% lean you typically won’t need to drain any fat. Add 2 cups Organic Salsa (I love Organic Jacks and it’s easy to find at Costco) Heat thoroughly. While meat is browning: Arrange the potatoes, ground turkey and lettuce side by side in a bowl. Enjoy! Feel free to add avocado, olives or chopped tomatoes! However, the use of a vegetable packed salsa eliminates the need to add a lot of toppings. Prep time: 5 minutes. Cook time: 15 minutes.  Yields 8 servings.
